Radiantly Raw: My favourite Rainbow Salad recipe

Today’s post is a little something different. It’s a *gasp* recipe. One of those recipes I eat all the time and I get asked for the recipe for all the time.

It’s my own Radiantly Raw Rainbow Salad.

Why Radiantly Raw?

I dabble in raw-ness. I’m not full time yet. I’m still as flexitarian as they come. But whenever I *do* eat rawly goodness, I feel radiant.

Funny that. Eating nature’s bounty, just as it was meant to be? What a novel way to eat!

Try this baby out, and let me know what you think :)

Servings: Serves 4-6

Ingredients:

½ Red/purple cabbage, chopped
½ Green cabbage, chopped
3 carrots, grated
½ cup macadamia nuts
¼ cup pine nuts
3 tablespoon lemon juice
1 teaspoon garlic, crushed
¼ cup olive oil
1 cup green leafies (i.e. rocket or spinach leaves)
1 teaspoon vegetable stock


Preparation:

Combine cabbages, carrots and green leafies

Put in a blender macadamia nuts, pine nuts, vegetable stock, lemon juice, garlic, olive oil. Add a splash of water. Blend till smooth. Test seasoning.


Serve nut mayonnaise over leafies.

Wa-la! Delicious rainbow salad!

It’s a feast for the eyes & ze belly!
